An Irish native, Jim is extremely passionate about local Irish food, its origins and the global influences that have made Irish cuisine what it is today. A natural chef, Jim has worked in the food business for several years and is keen to share with travelers his depth of knowledge and love of Irish food history during this private food walking tour of Dublin. A qualified national guide, Jim says that it’s never about the tour, it’s always about the people. He enjoys connecting with people and communicates the cleanliness of Irish food derived from its beautiful pastures, rich soil and clear Atlantic water. With Jim, you will gain awareness of the origins of a product, from tasting the subtle flavors of grass in local Irish artisanal butter to the taste of limestone in a particular variety of oysters. The Irish believe deeply in the farm-to-fork tradition - Jim says that environmental awareness is not something that Ireland has learned, it is something they have never forgotten. Learn about the sustainable food traditions of Ireland and taste a variety of Irish food during this eye-opening tour with a knowledgeable Irishman! For this food walking tour, meet your guide Jim at Trinity College and walk through Dublin's city center exploring some of the best spots for oysters, seafood, traditional pub fare, artisanal cheese and meats, ice-cream and (optional but recommended!) Irish whisky. Your tour will last about two and a half hours during which you will cover approximately two miles on foot. Walk through the cobblestoned streets of Dublin and explore regional food sold by your host's favorite vendors. You will stop at four to five spots that include an oyster bar, seafood cafe, traditional pub for a stew tasting or a contemporary cafe for an artisanal Irish cheese and meat tasting, as well as an ice-cream shop that specializes in making ice cream from the rich milk of the Kerry cow! You might learn about what flavor to expect from an oyster depending on its origin or indulge your taste buds in three traditional Irish stews - lamb, beef and coddle (sausage). Depending on your dietary preferences and restrictions, Jim is happy to customize the tour for you. If you choose the optional alcohol add-on, you will experience a whisky pairing of four Irish whiskies at a popular bar.
